Terms at a glance

White, green, oolong and black tea all come from the same plant – Camellia sinensis. What sets them apart is the degree of oxidation: green tea is heated straight away to stop it, oolong is partially oxidised and black tea fully oxidised. Sencha is a steamed Japanese green tea; genmaicha is sencha with roasted rice; gunpowder is Chinese green tea rolled into pellets. Tarry Souchong is smoked over pinewood. Earl Grey is not a variety but a flavouring with bergamot. Rooibos and herbal infusions are not tea in the botanical sense – and neither is the cocoa nib infusion.
