Terms at a glance
A terrine is cooked in its mould in a bain-marie and keeps the texture of the meat; rillettes are cooked slowly for hours in their own fat and then shredded, and grillons are the Périgord variant, rendered until crisp. The Périgord (Dordogne département) is the home of the black truffle Tuber melanosporum; Pécharmant and Loupiac are AOC wines from the surrounding area which, as ingredients, add depth and fruity acidity, and Piment d’Espelette is a mild AOP chilli variety from the Basque Country. All the terms are explained in our glossary of terms.
